Why it matters

Baffle filters are the first line of defense in the exhaust system: their vanes force grease-laden air to change direction, condensing grease into the trough instead of the duct. Clogged filters do the opposite — airflow drops, smoke rolls off the hood into the dining room, the cookline runs hotter, and vapor bypasses into the duct where it becomes fuel. NFPA 96 also prohibits mesh filters in grease applications; if your kitchen still runs mesh, that's an inspection finding waiting to happen.

Between professional cleanings, filters need attention weekly to monthly depending on volume — that part your staff can legally do. What staff can't do is the system behind the filters. Our exchange program removes the chore entirely: on each route visit we swap in freshly degreased filters, inspect fit and condition, and replace bent or burned-through units before an inspector notices them.

Common questions

Can our kitchen staff just run filters through the dish machine?

For routine upkeep, yes — staff filter cleaning between services is allowed and smart. But dish machines rarely remove baked-on grease from baffle interiors, and staff cleaning never satisfies NFPA 96's requirement that the system itself be professionally cleaned on schedule.

How often should baffle filters be cleaned?

High-volume cooking: weekly, sometimes daily for charbroilers. Moderate volume: every one to two weeks. The moment you see grease dripping from a filter edge or smoke escaping the hood, they're overdue.
